Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp salt

1/2 tsp black pepper

1 cup spinach (fresh or frozen)

2 tbsp olive oil

1/2 cup chicken broth (or vegetable broth)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare Vegetables: Start by peeling and dicing the sweet potatoes into small cubes for even cooking. Chop the onion and red bell pepper, and mince the garlic.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally, until they begin to soften and brown slightly.

      Add Aromatics: Push the sweet potatoes to one side of the skillet. In the cleared space, add the remaining tablespoon of olive oil and then the chopped onion and minced garlic. Sauté them for about 2-3 minutes until the onion is translucent and fragrant.

        Brown the Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until it's browned and cooked through, about 5-7 minutes.

          Season and Combine: Sprinkle the smoked paprika, cumin, salt, and black pepper over the turkey mixture. Stir well to ensure the spices are evenly distributed.

            Add Broth and Veggies: Pour in the chicken broth and mix well. Add the diced red bell pepper and spinach. Cook for an additional 5 minutes, stirring occasionally, until the sweet potatoes are tender and the spinach has wilted.
