Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn kernels (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and pepper, to taste

2 tablespoons olive oil

1 cup chicken broth

Fresh cilantro or parsley, for garnish (optional)

Lime wedges, for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally until they begin to soften and caramelize. Remove from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper, and sauté until the onions become translucent (about 4-5 minutes). Add the minced garlic and cook for an additional 1 minute.

      Add Turkey: Increase the heat to medium-high and add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 6-8 minutes.

        Combine Ingredients: Once the turkey is cooked, return the sweet potatoes to the skillet. Add the corn, smoked paprika, cumin, oregano, salt, and pepper. Stir well to combine all ingredients.

          Simmer: Pour in the chicken broth and bring to a gentle simmer. Reduce the heat to medium-low and cook for another 5-7 minutes, allowing the flavors to meld together and the sweet potatoes to finish cooking.
