1 lb (450g) ground turkey

2 medium sweet potatoes, diced into small cubes

1 red bell pepper, diced

1 cup corn (fresh, canned, or frozen)

1 small onion, diced

2 cloves garlic, minced

1 tsp paprika

1 tsp cumin

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup chicken broth (or vegetable broth for a vegetarian option)

2 cups baby spinach

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prep the Sweet Potatoes: Start by peeling and dicing the sweet potatoes into small cubes to ensure they cook evenly and quickly. Set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and red bell pepper to the skillet and cook for about 3-4 minutes until they start to soften.

      Add Ground Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until it's browned and fully cooked through, about 5-7 minutes.

        Incorporate Sweet Potatoes: Once the turkey is cooked, add the diced sweet potatoes and corn to the skillet. Stir to combine.
