Ingredients

1 lb ground turkey

2 cups mixed stir-fry vegetables (bell peppers, snap peas, carrots, and broccoli)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

½ cup teriyaki sauce

1 tablespoon soy sauce (low sodium)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch (optional for thickening)

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Sauce: In a small bowl, whisk together the teriyaki sauce, soy sauce, sesame oil, rice vinegar, and cornstarch (if using). Set aside.

Cook the Turkey: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey, breaking it up with a spatula. Cook until browned and fully cooked, about 5-7 minutes.

Add Aromatics: Stir in the minced garlic and grated ginger and sauté for an additional 1-2 minutes until fragrant.

Stir-Fry Vegetables: Add the mixed vegetables to the skillet. Cook the mixture, stirring occasionally, until the vegetables are tender yet crisp, about 3-5 minutes.

Combine with Sauce: Pour the teriyaki sauce mixture over the turkey and vegetables. Stir to evenly coat all ingredients and allow it to cook together for 2-3 minutes, letting the flavors meld and the sauce thicken slightly.

Serve: Remove from heat. Serve the stir fry over cooked rice or quinoa. Garnish with sliced green onions and sesame seeds.
