1 cup green or brown lentils, rinsed

2 medium potatoes, diced (about 2 cups)

1 large onion, chopped

2 carrots, sliced

2 celery stalks, diced

4 cloves garlic, minced

6 cups vegetable broth

1 can (14 oz) diced tomatoes (with juices)

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the diced potatoes, rinsed lentils, vegetable broth, and diced tomatoes to the pot. Stir to combine.

        Season with ground cumin, smoked paprika, dried thyme, salt, and pepper. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 25-30 minutes, or until the lentils and potatoes are tender. Stir occasionally to prevent sticking.

            Taste and adjust seasoning as needed. For a creamier texture, you can use an immersion blender to puree a portion of the soup, or mash some of the potatoes directly in the pot.
