Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 large eggs

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup unsalted butter

1/3 cup honey

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Begin by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to an even thickness of about 1 inch. This ensures they cook evenly.

Marinate the Chicken: In a mixing bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken breasts, ensuring they are completely submerged. Cover with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Set Up Breading Station: In one shallow dish, combine the flour, garlic powder, paprika, salt, and pepper. In a second dish, whisk the eggs until frothy. In a third dish, place panko breadcrumbs.

Bread the Chicken: Remove the chicken from the marinade and let it drain. Dread each piece first in the flour mixture, then dip it into the egg mixture, and finally coat it with panko breadcrumbs. Press the breadcrumbs onto the chicken to ensure a nice coating.

Cook the Chicken: In a large skillet, melt 1/4 cup of butter over medium heat. Once hot, add the breaded chicken pieces. Cook them for about 6-7 minutes per side or until golden brown and cooked through. You may need to do this in batches. Remove the chicken and place it on paper towels to absorb excess oil.

Make the Honey Butter Sauce: In a small saucepan, melt the remaining 1/4 cup of butter. Stir in the honey and apple cider vinegar, and cook for about 2-3 minutes until the mixture starts to bubble and thickens slightly. Remove from heat.

Serve: Drizzle the honey butter sauce over the cooked chicken pieces and garnish with fresh parsley.

Enjoy: Serve the Honey Butter Chicken with your choice of sides, such as a fresh salad or creamy mashed potatoes.
