Ingredients
  

1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

1 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon grated fresh ginger

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (optional for extra heat)

1 bell pepper, cut into 1-inch chunks (any color)

1 medium onion, cut into wedges

1 zucchini, sliced into thick rounds

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Prepare the Marinade: In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes (if using). Set aside about 1/4 cup of the marinade for basting later.

    Marinate the Chicken: Place the chicken cubes in a large resealable plastic bag or a glass dish. Pour the majority of the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 1 hour, preferably overnight for best flavor.

      Prep the Vegetables: While the chicken is marinating, prepare your vegetables. Cut the bell pepper, onion, and zucchini, and set aside.
