1 pound fresh carrots, peeled and cut into uniform sticks

3 tablespoons unsalted butter, melted

2 tablespoons honey

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Optional: Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

In a mixing bowl, combine the melted butter, honey, minced garlic, thyme, salt, and pepper. Whisk until well blended.

Add the carrot sticks to the bowl and toss them in the honey garlic mixture until they are evenly coated.

Spread the carrots out in a single layer on the prepared baking sheet, ensuring they have space to roast evenly.

Roast the carrots in the preheated oven for 25-30 minutes, stirring halfway through for even cooking, until they are tender and caramelized.

Once done, remove them from the oven and let them cool for a couple of minutes. Optionally, sprinkle with chopped parsley before serving.

Serve warm as a delicious side dish!
