2 boneless, skinless chicken breasts

2 tablespoons honey

2 tablespoons fresh lime juice

1 teaspoon lime zest

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

1 cup long-grain rice (white or brown)

2 cups chicken broth (or water)

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Olive oil for drizzling

Marinate the Chicken: In a bowl, mix 2 tablespoons of honey, fresh lime juice, lime zest, garlic powder, cumin, salt, and pepper. Add the chicken breasts, coating them well. Cover and marinate in the refrigerator for at least 30 minutes.

    Cook the Rice: In a medium saucepan, bring the chicken broth (or water) to a boil. Add the rice, reduce heat to low, cover, and simmer until the rice is tender (about 15-20 minutes for white rice, 40-45 minutes for brown rice). Remove from heat and fluff with a fork.

      Prepare the Avocado Mixture: In a bowl, gently combine the diced avocado, chopped red onion, diced tomato, cilantro, lime juice, and a sprinkle of salt. Set aside.

        Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing.
