Hot Honey Salmon Bites

Ingredients
  

1 lb salmon fillet, skin removed and cut into bite-sized cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

1/4 teaspoon red pepper flakes (adjust for spice preference)

1/3 cup honey

2 tablespoons apple cider vinegar

1 tablespoon soy sauce

1 tablespoon Dijon mustard

1 tablespoon chopped fresh cilantro (for garnish)

Instructions
 

In a medium bowl, combine the olive oil, garlic powder, smoked paprika, black pepper, salt, and red pepper flakes.

    Add the salmon cubes to the bowl and gently toss until they are well coated in the spice mixture. Let them marinate for about 15 minutes to absorb the flavors.

      Meanwhile, in a small saucepan, combine the honey, apple cider vinegar, soy sauce, and Dijon mustard. Warm the mixture over medium heat and whisk constantly until it becomes slightly thickened and bubbly, about 3-4 minutes. Remove from heat.

        Preheat your grill or stovetop grill pan over medium-high heat.

          Skewer the marinated salmon cubes onto soaked wooden skewers (or metal skewers). Make sure to leave some space between each piece for even cooking.

            Grill the salmon skewers for about 2-3 minutes on each side, or until they are cooked through and have nice grill marks.

              Brush the grilled salmon bites generously with the hot honey sauce during the last minute of cooking.
