1 cup apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1/4 cup melted butter

Cinnamon sugar for coating (1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a donut pan with non-stick spray or melted butter.

    In a small saucepan over medium heat, bring the apple cider to a boil. Reduce heat and simmer until it has reduced to about 1/2 cup (about 10-15 minutes). Let cool slightly.

      In a medium mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk together until well combined.

        In another large bowl, mix the brown sugar, granulated sugar, applesauce, egg, vanilla extract, and melted butter. Add the reduced apple cider to the mixture and stir until smooth.

          Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; it’s okay if there are a few lumps.

            Carefully spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

              Bake for 12-15 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

                Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.

                  While warm, dip each donut in cinnamon sugar, coating both sides generously.

                    Serve immediately for the best flavor, or keep in an airtight container for a few days.
