2 cups rolled oats

2 large apples, peeled and diced (preferably Granny Smith for tartness)

1 cup milk of choice (almond, oat, or cow's milk)

2 large eggs

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins or chopped nuts (optional)

1/4 cup chopped walnuts or pecans (for topping)

2 tablespoons coconut oil or melted butter (for greasing the baking dish)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x9 inch (or similar size) baking dish with coconut oil or melted butter.

    In a large mixing bowl, combine the rolled oats, diced apples, cinnamon, nutmeg, and salt. Mix thoroughly to ensure the apples are evenly coated with the dry ingredients.

      In a separate bowl, whisk together the milk, eggs, maple syrup (or honey), and vanilla extract until well blended.

        Pour the wet mixture into the bowl with the oats and apples. Stir until everything is nicely combined.

          If using, fold in the raisins or chopped nuts to add extra texture and flavor to the bake.
