Ingredients

2 cups rolled oats

2 cups unsweetened almond milk (or any milk of choice)

2 medium apples, peeled and diced (Honeycrisp or Fuji works great)

1/2 cup unsweetened applesauce

1/4 cup maple syrup or honey (adjust according to sweetness preference)

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Toppings: sliced apples, a sprinkle of cinnamon, and a drizzle of almond butter (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

Mix Oats: In a large mixing bowl, combine the rolled oats, almond milk, applesauce, diced apples, maple syrup, cinnamon, nutmeg, salt, and vanilla extract. Stir until everything is well-mixed.

Add Nuts & Fruits: If using, fold in the chopped walnuts or pecans and the raisins or dried cranberries into the oat mixture.

Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for about 30-35 minutes or until the top is golden brown and firm to the touch.

Cool & Serve: Once baked, remove from the oven and let it cool for about 10 minutes. For serving, cut into squares and top with extra apple slices, a sprinkle of cinnamon, and a drizzle of almond butter if desired.

Store: Any leftovers can be stored in an airtight container in the fridge for up to a week. Reheat in the microwave for a quick breakfast!
