1/2 cup granulated sugar

1/2 cup packed brown sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

2 large eggs

1/2 cup unsweetened applesauce

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups peeled, diced apples (about 2 medium apples)

1/2 cup walnuts or pecans, chopped (optional)

1 tablespoon sugar mixed with 1 teaspoon cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      In a separate bowl, beat the eggs. Add the applesauce, vegetable oil, and vanilla extract, mixing until smooth.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Fold in the diced apples and nuts if using, ensuring they are evenly distributed in the batter.

            Divide the batter evenly among the muffin cups, filling each about two-thirds full.

              In a small bowl, mix together the sugar and cinnamon for the topping, then sprinkle it generously over the muffin batter.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
