4 large eggs

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon sugar

1 tablespoon soy sauce

Salt and pepper to taste

4 slices of soft white bread (ideally shokupan)

1 tablespoon unsalted butter, softened

Lettuce leaves (optional, for added crunch)

Instructions
 

Boil the Eggs: Place the eggs in a pot and cover them with water. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let the eggs sit in hot water for 5 minutes, then transfer to an ice bath for 5 minutes to cool.

    Prepare the Egg Filling: Once the eggs are cool, peel them and chop them finely. In a mixing bowl, combine the chopped eggs with mayonnaise, Dijon mustard, sugar, soy sauce, salt, and pepper. Mix well until creamy and consistent.

      Prepare the Bread: Spread softened butter on one side of each slice of bread. This will add flavor and keep the bread from getting soggy.

        Assemble the Sandwich: Place 2 slices of bread butter-side down on a clean surface. Divide the egg mixture evenly on each slice. If desired, add a few lettuce leaves on top of the egg mixture for crunch. Cover with the remaining slices of bread, butter-side up.
