Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or ground pork for a different flavor)

1/2 cup panko breadcrumbs

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

1/2 teaspoon black pepper

1 egg, beaten

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon sesame oil

1 teaspoon soy sauce

Prepare the Meatball Mixture: In a large bowl, combine ground beef, panko breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, black pepper, and the beaten egg. Mix until all ingredients are well combined.

    Form the Meatballs: Preheat your oven to 400°F (200°C). Using your hands, shape the mixture into meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until they are browned and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).

        Prepare the Spicy Mayo Dip: In a small bowl, mix together mayonnaise, sriracha, lime juice, and sesame oil. Adjust the spice level by adding more sriracha if desired.

          Serve: Once the meatballs are done baking, remove them from the oven and let them cool slightly. Serve the meatballs warm, garnished with sesame seeds and cilantro if using, alongside the spicy mayo dip for dipping.
