Ingredients

1 pound ground beef (preferably 80/20 for added flavor)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon gochujang (Korean chili paste) – adjust based on spice preference

1 teaspoon black pepper

4 green onions, chopped

1 cup cooked rice (white or brown, for serving)

Sesame seeds, for garnish

Optional: kimchi or pickled vegetables, for serving

Instructions

Prepare the Beef: In a large skillet over medium-high heat, add the ground beef. Cook, breaking it apart with a spatula, until it starts to brown (about 5 minutes).

Add Aromatics: Drain excess fat (if needed) and push the beef to one side of the skillet. Add minced garlic and grated ginger to the empty side. Sauté for about 1 minute until fragrant, then mix with the beef.

Create the Sauce: In a small bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, gochujang, and black pepper. Pour this mixture into the skillet with the beef.

Simmer: Stir everything together and let it cook for an additional 3-4 minutes, allowing the beef to absorb the sauce and flavors, stirring occasionally.

Serve: Prepare bowls by placing a scoop of cooked rice at the bottom. Top with the Korean ground beef mixture, and garnish with chopped green onions and a sprinkle of sesame seeds.

Optional Toppings: Serve with kimchi or pickled vegetables on the side for added flavor and crunch.
