Ingredients
  

8 oz whole grain pasta (penne or fusilli)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1 cup fresh basil leaves, roughly chopped

1/4 cup olives (black or green), pitted and sliced

Zest and juice of 1 large lemon

3 tbsp olive oil

1 tbsp maple syrup (or agave syrup)

1 tsp Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup nutritional yeast (for a cheesy flavor)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl along with the chopped basil and olives.

      Make the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, maple syrup, Dijon mustard, salt, and pepper until well combined.

        Combine Ingredients: Once the pasta has cooled, add it to the bowl with the vegetables. Pour the dressing over the pasta salad and gently toss until everything is evenly coated.

          Adjust Seasoning: Taste the pasta salad and adjust seasoning with additional salt, pepper, or lemon juice as desired. If using nutritional yeast, sprinkle it in and mix well to incorporate.

            Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature, garnished with extra fresh basil if desired.
