Lemon Garlic Shrimp Pasta With Spinach

Ingredients
  

8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

Juice and zest of 1 large lemon

4 cups fresh spinach

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for another 1-2 minutes. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, cooking until the garlic is fragrant (about 30 seconds). Be careful not to burn it.

        Combine Ingredients: Add the lemon juice, zest, and spinach to the skillet. Stir until the spinach wilts. Then add the halved cherry tomatoes and cooked shrimp back into the skillet. Mix well.

          Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency.

            Finishing Touches: Stir in the grated Parmesan cheese, taste, and adjust seasoning with more salt, pepper, or lemon juice if desired.
