Low Carb Mushroom & Spinach Cauliflower Rice

1 medium head of cauliflower (or 4 cups riced cauliflower)

2 tablespoons olive oil

1 cup mushrooms, sliced (cremini or button mushrooms)

2 cups fresh spinach, chopped

3 cloves garlic, minced

1 small onion, diced

1 teaspoon dried thyme

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cauliflower Rice: If using a fresh head of cauliflower, cut it into florets and pulse in a food processor until it resembles rice grains. Alternatively, use pre-packaged riced cauliflower for convenience.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

      Add Garlic and Mushrooms: Stir in the minced garlic and sliced mushrooms. Cook for an additional 4-5 minutes, until the mushrooms have softened and released their moisture.

        Cook the Cauliflower Rice: Add the riced cauliflower to the skillet, stirring to combine. Season with thyme, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

          Incorporate Spinach: Add the chopped spinach to the mixture, stirring until wilted (about 2-3 minutes).

            Finish with Cheese (optional): If you’re using Parmesan cheese, sprinkle it over the dish and stir until melted and evenly distributed.
