8 large eggs

1 cup egg whites

1 cup cooked black beans (drained and rinsed)

1 cup diced bell peppers (red, green, or yellow)

1 cup diced onions

1 cup fresh spinach, chopped

1 cup cooked lean turkey sausage or chicken sausage, crumbled

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

8 whole wheat tortillas (burrito-sized)

1 cup shredded low-fat cheese (optional)

Fresh salsa for serving (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Egg Mixture: In a large bowl, whisk together the eggs, egg whites, garlic powder, cumin, chili powder, salt, and pepper until well combined.

      Sauté Veggies: In a skillet over medium heat, sauté the onions and bell peppers until they are soft, about 5-7 minutes. Stir in the chopped spinach and cook until wilted, approximately 1-2 minutes. Remove from heat.

        Combine Ingredients: Add the cooked veggies, black beans, and turkey sausage to the egg mixture. Stir until everything is evenly coated.

          Bake the Egg Mixture: Pour the egg mixture onto the prepared sheet pan and spread it out evenly. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and slightly golden on top.

            Assemble Burritos: Once the egg mixture has cooled slightly, cut it into 8 equal rectangles (or squares). Take a whole wheat tortilla and place a rectangle of the egg mixture in the center. If using cheese, sprinkle a small amount on top of the egg mixture. Fold in the sides and then roll up tightly from the bottom.

              Second Bake (optional): If you prefer crispy burritos, place the rolled burritos seam side down on a clean sheet pan. Bake for an additional 10 minutes at 375°F (190°C) until they are golden and crisp.

                Serve: Cut each burrito in half and serve warm with fresh salsa on the side.
