Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional for spice)

1 cup spinach, fresh

8 oz pasta (penne or fettuccine recommended)

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until cooked through and a nice golden brown. Remove from the skillet and let it rest for a few minutes before slicing.

Make the Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.

Combine Ingredients: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Allow the sauce to simmer for about 3-5 minutes to thicken slightly.

Add Spinach and Cheese: Stir in the fresh spinach and allow it to wilt. Then, mix in the grated Parmesan cheese until melted and combined.

Mix Pasta and Chicken: Add the cooked pasta to the skillet and toss it in the sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency. Slice the chicken and place it on top of the pasta.

Garnish and Serve: Garnish with fresh basil and additional Parmesan if desired. Serve warm and watch your loved ones fall in love with this dish!
