Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

8 oz fettuccine or your choice of pasta

Fresh basil, for garnish

Red pepper flakes, optional for spice

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: Season chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through. Remove chicken from the skillet and let it rest for a few minutes before slicing into strips.

Make the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook until they begin to soften, about 3-4 minutes.

Combine Cream and Seasoning: Pour in the heavy cream and sprinkle in the Italian seasoning. Stir well and let simmer for about 2-3 minutes until slightly thickened.

Add Cheese: Stir in the grated Parmesan cheese until melted and well combined. Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.

Mix Everything Together: Add the cooked pasta and sliced chicken to the sauce. Toss until the pasta is well coated with the creamy sauce.

Serve: Transfer to serving plates and garnish with fresh basil leaves. Optional: sprinkle additional Parmesan cheese on top for extra flavor.
