Mediterranean Chicken Pasta Salad

Tossed in a zesty olive oil and red wine vinegar dressing, it’s a quick and healthy option that can be made ahead of time. Ingredients
  

8 oz rotini or penne pasta

1 lb boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Cook the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and a sprinkle of garlic powder. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked and no longer pink in the center. Remove from heat and let cool. Once cooled, slice into bite-sized pieces.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper. Taste and adjust seasoning if necessary.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

          Dress the Salad: Pour the dressing over the pasta salad and toss gently to combine all the ingredients evenly. Make sure everything is coated in the dressing.

            Chill and Serve: Cover the salad with plastic wrap and place it in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
