Ingredients

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup sweetened condensed milk

1 package (8 oz) cream cheese, softened

1/2 tsp vanilla extract

1/2 cup shredded coconut (optional)

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

Fresh pineapple slices and cherries for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are moistened. Press this mixture into the bottom of a 9-inch pie dish or a square baking pan to form an even crust. Set aside.

Make the Cream Mixture: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sweetened condensed milk, mixing well until fully incorporated.

Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture along with the vanilla extract, being careful not to deflate the whipped cream.

Combine the Pineapple: Fold the drained crushed pineapple and shredded coconut (if using) into the cream mixture until evenly distributed.

Assembly: Pour the pineapple cream mixture over the prepared graham cracker crust, spreading it evenly. Smooth the top with a spatula for a beautiful finish.

Chill: Cover the dessert with plastic wrap and refrigerate for at least 4 hours or until set. This allows the flavors to meld together and the dessert to firm up nicely.

Serve: Once chilled, slice into squares or wedges. Garnish with fresh pineapple slices and cherries if desired. Enjoy your delicious no-bake dessert!
