One Pot French Onion Pasta

12 oz fettuccine or pasta of choice

2 large onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth (or beef broth for a non-vegetarian option)

1 cup heavy cream

1 cup grated Gruyère cheese (plus more for topping)

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon fresh thyme (or ½ tsp dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Sauté the Onions: In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and a pinch of salt. Sauté for about 15-20 minutes, stirring occasionally, until they are deeply caramelized and golden brown.

    Add Garlic and Thyme: Stir in the minced garlic and thyme, and cook for an additional 1-2 minutes until fragrant.
