1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup low-sodium chicken broth

1 cup heavy cream

1 lb (450g) gnocchi (store-bought or homemade)

Juice and zest of 1 large lemon

2 cups fresh spinach, roughly chopped

Salt and pepper, to taste

1/2 cup grated Parmesan cheese, plus more for serving

Fresh parsley, chopped for garnish

Sauté Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove the chicken and set it aside.

    Cook Aromatics: In the same pot, add the diced onion and sauté until translucent (about 3-4 minutes). Add the minced garlic, dried thyme, and dried oregano, cooking for an additional minute until fragrant.

      Deglaze and Combine: Pour in the chicken broth, scraping the bottom of the pot to release any browned bits. Stir in the heavy cream, lemon juice, and lemon zest. Bring the mixture to a gentle simmer.

        Add Gnocchi and Chicken: Once simmering, add the gnocchi and the cooked chicken back into the pot. Stir well to combine everything. Let it cook for around 3-5 minutes, or until the gnocchi are tender and cooked through.

          Add Spinach and Cheese: Stir in the fresh spinach and grated Parmesan cheese, allowing the spinach to wilt. Taste and adjust seasonings with more salt, pepper, or lemon juice if desired.
