Ingredients
  

2 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium lemon (zested and juiced)

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a large skillet, bring the broth to a boil. Add the orzo and cook according to package instructions, typically 8-10 minutes, until al dente. Stir occasionally to prevent sticking. Once cooked, drain and set aside, reserving 1/4 cup of the broth.

    Sauté Vegetables: In the same skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then add the halved cherry tomatoes and cook until softened, around 3-4 minutes.

      Add Spinach: Stir in the baby spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

        Cook the Salmon: Push the vegetables to one side of the skillet. Add the butter and place the salmon fillets skin side down in the skillet. Season with salt, pepper, and lemon zest. Cook for about 4-5 minutes until the skin is crispy. Flip the fillets and pour the lemon juice over. Cook for an additional 4-5 minutes until the salmon is cooked through and flakes easily with a fork.

          Combine: Reduce heat to low, and stir the reserved broth back into the skillet along with the cooked orzo. Mix everything together gently, allowing the flavors to meld.

            Serve: Remove from heat, garnish with fresh parsley, and serve immediately with extra lemon wedges on the side.
