One Skillet Salmon with Lemon Orzo

Ingredients
  

4 salmon fillets (6 oz each)

Salt and black pepper, to taste

1 tablespoon olive oil

1 cup orzo pasta

2 cups vegetable or chicken broth

1 lemon, zested and juiced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1/4 cup parmesan cheese, grated

Optional: lemon wedges for serving

Instructions
 

Prepare the Salmon: Season both sides of the salmon fillets with salt and black pepper.

    Sear the Salmon: In a large skillet over medium-high heat, add the olive oil. Once hot, place the salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes or until the skin is crispy. Carefully flip the salmon and cook for an additional 2-3 minutes or until it reaches your desired doneness. Remove the salmon from the skillet and set aside.

      Cook the Orzo: In the same skillet, add in the minced garlic and sauté for about 30 seconds until fragrant. Then, add the orzo, and stir for a minute to toast it lightly.

        Add Broth and Lemon: Pour in the vegetable or chicken broth along with the lemon juice and zest. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.

          Combine Vegetables and Finish: Once the orzo is cooked, stir in the cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach has wilted.

            Add Dill and Cheese: Remove the skillet from heat and stir in the chopped dill and parmesan cheese.

              Serve: Gently place the seared salmon fillets back on top of the orzo. Serve warm with extra lemon wedges if desired.
