Peruvian Chicken & Rice with Green Sauce

For the Chicken:

4 boneless, skinless chicken thighs

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Rice:

1 cup long-grain white rice

2 cups chicken broth

1 tablespoon unsalted butter

Salt to taste

For the Green Sauce (Aji Verde):

1 cup fresh cilantro leaves, packed

2 jalapeños, seeds removed (or adjust based on heat preference)

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tablespoons lime juice

1 garlic clove

Salt to taste

Water to thin, if necessary

Marinate the Chicken: In a bowl, combine chicken thighs, olive oil, cumin, paprika, garlic powder, lime juice, salt, and pepper. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.

    Cook the Rice: In a medium saucepan, melt the butter over medium heat. Add the rice and toast for about 2 minutes, stirring frequently. Pour in chicken broth, add salt to taste, and bring to a boil. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes before fluffing with a fork.

      Prepare the Green Sauce (Aji Verde): In a blender or food processor, combine cilantro, jalapeños, mayonnaise, Greek yogurt, lime juice, garlic, and salt. Blend until smooth. If the sauce is too thick, add a little water to reach your desired consistency. Adjust seasoning if necessary.

        Cook the Chicken: Preheat a grill or skillet over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

          Assemble the Dish: Place a serving of rice on each plate, slice the grilled chicken and arrange it atop the rice. Drizzle generous amounts of Aji Verde over the chicken, and serve with extra sauce on the side.

            Garnish: For an added touch, garnish with lime wedges and extra cilantro leaves.
