For the Grilled Chicken:

4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice preference)

Juice of 2 limes

1 tablespoon olive oil

Salt and pepper to taste

For the Creamy Green Sauce:

1 cup fresh cilantro, stems removed

1 jalapeño, seeds removed and chopped (adjust for spice preference)

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

2 tablespoons lime juice

Salt to taste

Marinate the Chicken: In a large bowl, combine minced garlic, cumin, smoked paprika, cayenne pepper, lime juice, olive oil, salt, and pepper. Add the chicken thighs and ensure they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Green Sauce: In a blender or food processor, combine fresh cilantro, chopped jalapeño, mayonnaise, Greek yogurt, lime juice, and salt. Blend until smooth and creamy. Adjust the seasoning to taste and set aside.

      Preheat the Grill: Preheat your grill to medium-high heat. If you're using a grill pan on the stovetop, heat it over medium-high heat.

        Grill the Chicken: Remove the chicken from the marinade. Grill the chicken thighs for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and have nice grill marks. Remove from the grill and let them rest for a few minutes.
