8 oz (225g) pasta of your choice (penne, fusilli, or spaghetti)

2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (or walnuts)

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

2 boneless, skinless chicken breasts

1 tablespoon balsamic vinegar

1 teaspoon Italian seasoning

Cherry tomatoes, halved (for garnish)

Fresh basil leaves (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Make the Pesto: In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, and a pinch of salt and pepper. Pulse until combined. While the processor is running, gradually drizzle in the olive oil until the pesto becomes smooth and creamy. Adjust seasoning if necessary.
