Ingredients

1 cup fresh watermelon, pureed

1 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish

Additional watermelon chunks for layering

Optional toppings: granola, coconut flakes, or berries

Instructions

In a medium bowl, combine the pureed watermelon, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until well mixed.

Gradually stir in the chia seeds, ensuring they are evenly distributed.

Cover the bowl and place it in the refrigerator for at least 2-4 hours, or overnight for best results, allowing the chia seeds to absorb the liquid and thicken the mixture.

Once the pudding has set, remove it from the fridge. If the pudding is too thick, you can add a splash of coconut milk to reach your desired consistency.

To assemble your breakfast jar, start with a layer of watermelon chia pudding at the bottom, followed by a layer of fresh watermelon chunks, and repeat until you reach the top of the jar.

Top your jar with fresh mint leaves and your choice of toppings such as granola, coconut flakes, or berries for extra texture and flavor.

Seal the jar with a lid and enjoy your refreshing watermelon chia pudding breakfast on-the-go, or indulge in a delightful morning treat at home!
