2 cups cooked jasmine rice (preferably day-old)

2 chicken breasts, diced

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, thinly sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon teriyaki sauce

1 tablespoon sesame oil

2 eggs, beaten

2 tablespoons vegetable oil

Salt and pepper to taste

Toasted sesame seeds, for garnish

Nori strips, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with 1 tablespoon soy sauce, 1 tablespoon teriyaki sauce, and a pinch of pepper. Let it marinate for at least 15 minutes.

    Prepare the Rice: If not using day-old rice, spread freshly cooked rice on a baking sheet to cool. This helps prevent clumping during cooking.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
