Ingredients

1.5 lbs boneless, skinless chicken thighs

1 cup fresh pineapple, cubed

2 tablespoons olive oil

2 tablespoons chipotle in adobo sauce, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

8 small corn tortillas

1/2 cup red onion, finely chopped

1/2 cup cilantro, chopped

1 lime, cut into wedges

Avocado slices, for serving (optional)

Crumbled feta or queso fresco, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Chicken Marinade: In a large bowl, mix together the olive oil, minced chipotle in adobo, smoked paprika, ground cumin, garlic powder, salt, and pepper.

Marinate the Chicken: Add the chicken thighs to the bowl and toss well to ensure they are evenly coated in the marinade. Allow the chicken to marinate for at least 15 minutes, or up to overnight in the fridge for deeper flavor.

Roast the Chicken and Pineapple: Spread the marinated chicken thighs on a sheet pan. Scatter the cubed pineapple around the chicken. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F) and the edges are slightly crispy.

Warm the Tortillas: While the chicken is roasting, wrap the corn tortillas in foil and place them in the oven for the last 5-10 minutes of cooking to warm them up.

Prepare for Serving: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Then, slice the chicken into strips.

Assemble the Tacos: Place a few strips of chicken onto each warm tortilla, add a few pineapple pieces, sprinkle with red onion and cilantro, and squeeze fresh lime juice over the top.

Add Toppings: If desired, add avocado slices and crumbled feta or queso fresco for extra creaminess.

Serve: Enjoy your spicy pineapple chipotle chicken tacos right away, and serve any extra lime wedges on the side!
