1 lb smoked sausage (such as kielbasa or chicken sausage), sliced into 1-inch pieces

2 cups broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 cup red onion, sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

½ tsp salt

½ tsp black pepper

3 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup and toss your sausage pieces onto the pan.

      Add the Veggies: Add the broccoli, bell peppers, red onion, and cherry tomatoes to the pan with the sausage.

        Season Everything: In a small bowl, mix together the minced garlic, oregano, paprika, salt, pepper, and olive oil. Drizzle this mixture over the sausage and veggies.
