Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients
  

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, peeled and diced

1/2 red onion, finely chopped

1 jalapeño, seeds removed and finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

Juice of 1 lime

1 teaspoon chili powder

Salt to taste

For the Bowls:

2 cups cooked quinoa or brown rice

2 ripe avocados, sliced

1 cup cherry tomatoes, halved

1/2 cup radishes, thinly sliced

Fresh cilantro for garnish

Instructions
 

Prepare the Shrimp: In a bowl, combine the olive oil, minced garlic, paprika, cumin, salt, pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for 15 minutes.

    Make the Mango Salsa: In a medium bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix gently and set aside to allow the flavors to meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, and salt until smooth. Adjust seasoning as needed.

        Cook the Shrimp: Heat a skillet over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they are pink and cooked through. Remove from heat.

          Assemble the Bowls: In each serving bowl, layer the cooked quinoa or brown rice as the base. Top with slices of avocado, cherry tomatoes, and radishes. Add a generous portion of the shrimp.

            Top with Salsa and Sauce: Spoon the mango salsa over the shrimp and drizzle the lime-chili sauce on top. Garnish with fresh cilantro.
