Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup sour cream or Greek yogurt

1 tablespoon mayonnaise

Juice of 1 lime

1 teaspoon chili powder (adjust to taste)

Salt to taste

For the Bowls:

2 cups cooked quinoa or brown rice

1 avocado, sliced

1 cup mixed greens (spinach, arugula, or your choice)

Extra lime wedges for serving

Instructions
 

Prepare the Shrimp:

    In a medium bowl, combine the olive oil, garlic, smoked paprika, cumin, lime juice, salt, and pepper. Add the shrimp and toss to coat. Let the shrimp marinate for about 15 minutes.
