1 lb large shrimp, peeled and deveined

1 ripe avocado, diced

2 cups cooked quinoa or brown rice

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 cup mixed greens (spinach, arugula, or your choice)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro, for garnishing (optional)

For the Mango Salsa:

1 ripe mango, peeled and diced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (adjust for spice)

Juice of 1 lime

Salt, to taste

For the Lime-Chili Sauce:

1/2 cup sour cream or Greek yogurt

Juice of 1 lime

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

Prepare the Mango Salsa: In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño, lime juice, and a pinch of salt. Mix well and set aside to let the flavors meld.
