2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar (adjust to taste)

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1 large egg

1/2 cup milk (or plant-based milk)

1 teaspoon vanilla extract

Vegetable oil, for frying

Powdered sugar, for dusting (optional)

Honey or maple syrup (for serving)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, salt, and cinnamon. Mix well until the dry ingredients are evenly coated with the banana.

    In a separate bowl, whisk together the egg, milk, and vanilla extract until fully combined.

      Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. The batter should be slightly lumpy.

        Heat a skillet over medium heat and add enough vegetable oil to cover the bottom of the pan (about 1/4 inch).

          Once the oil is hot, drop spoonfuls of the banana batter into the skillet, flattening them slightly to form fritters. Fry in batches, ensuring not to overcrowd the skillet.

            Cook for 2-3 minutes on one side until golden brown, then gently flip and cook for another 2-3 minutes on the other side.

              Once cooked, place the fritters on a plate lined with paper towels to absorb any excess oil.

                Serve warm, dusted with powdered sugar, and drizzled with honey or maple syrup for added sweetness.
