8 oz. rice noodles (or your preferred noodle)

4 tablespoons vegetable oil

6 cloves garlic, minced

1-2 tablespoons chili paste (adjust to taste)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

½ cup green onions, chopped

Fresh cilantro, for garnish

Sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Cook the Noodles: Boil a pot of water and cook the rice noodles according to package instructions until al dente. Drain and set aside, reserving a little noodle water.

    Prepare the Sauce: In a bowl, mix together the chili paste, soy sauce, oyster sauce, sesame oil, rice vinegar, and sugar. Set aside.

      Sauté Garlic: In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being cautious not to burn it.

        Combine Noodles and Sauce: Add the cooked noodles to the skillet and pour the sauce mixture over them. Toss everything together to evenly coat the noodles, adding a splash of reserved noodle water if needed to loosen up the sauce.

          Add Green Onions: Stir in the chopped green onions and sauté everything together for an additional 1-2 minutes until heated through.
