1. Marinating the Chicken: The first step in achieving flavor-packed chicken is to marinate it. A simple marinade can be made using ingredients like olive oil, lime juice, garlic, chili powder, cumin, and a pinch of salt. Allow the chicken to marinate for at least 30 minutes; however, if time allows, letting it sit in the refrigerator for a few hours or even overnight will yield even better results. The marinade infuses the chicken with flavor and tenderizes the meat, ensuring that it remains juicy during cooking.

Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 cups mixed salad greens (romaine, spinach, arugula)

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 cup black beans, rinsed and drained

1 avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (optional)

Lime wedges for serving

Instructions

Prepare the Chicken: In a small bowl, mix olive oil, chili powder, cayenne pepper, garlic powder, cumin, salt, and pepper. Rub the spice mixture all over the chicken breasts.

Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side, or until fully cooked and the juices run clear. Remove from heat and let it rest for about 5 minutes before slicing.

Assemble the Salad: In a large salad bowl, combine the mixed greens, corn, red bell pepper, black beans, avocado, cherry tomatoes, red onion, and cheddar cheese.

Add Chicken: Slice the grilled chicken and place it on top of the salad mixture.

Garnish: Sprinkle fresh cilantro over the salad if desired and serve with lime wedges on the side.

Dress the Salad: Drizzle with your favorite Southwest dressing or a simple lime vinaigrette before serving.
