Sticky Chicken Rice Bowls Recipe

For the Sticky Chicken:

1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon sesame oil

Salt and pepper to taste

For the Rice:

1 cup jasmine rice

2 cups water

1 tablespoon coconut oil (optional)

For Toppings:

2 green onions, chopped

1/4 cup roasted sesame seeds

1 cucumber, thinly sliced

Fresh cilantro, for garnish

Marinate the Chicken: In a bowl, combine soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, ginger, sesame oil, salt, and pepper. Add the chicken pieces and mix well. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and optional coconut oil. Cover, reduce heat to low, and simmer for about 15 minutes, or until rice is tender and water is absorbed. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken along with the marinade. Cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened to a sticky consistency.
