Ingredients

For the Fruit Filling:

2 cups fresh strawberries, diced

2 cups fresh peaches, peeled and diced

1/4 cup granulated sugar

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 tablespoon flour

For the Crisp Topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, cut into small cubes

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the diced strawberries and peaches. Add in the granulated sugar, lemon juice, vanilla extract, and flour. Gently toss until the fruit is evenly coated. Pour the mixture into a greased 9x9 inch baking dish.

Make the Crisp Topping: In a separate bowl, mix the rolled oats, all-purpose flour, brown sugar, cinnamon, and salt together. Add the cold butter cubes into the mix. Using a fork or your fingers, mix until the mixture is crumbly and resembles coarse crumbs.

Assemble the Crisp: Spread the oat topping evenly over the fruit mixture in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the fruit is bubbling.

Cool and Serve: Remove from the oven and let it cool for about 10 minutes. Serve warm as is or with a scoop of vanilla ice cream for extra indulgence!
