Ingredients
  

2 large red onions, thinly sliced

2 tablespoons sumac

3 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions with salt and toss them to ensure they are evenly coated. Let them sit for about 10 minutes; this will help to soften their flavor.

    In a separate small bowl, whisk together the olive oil, fresh lemon juice, sumac, black pepper, and any additional salt to taste.

      After the onions have rested, rinse them under cold water to remove excess salt, then drain well and gently pat dry with paper towels.

        Add the rinsed onions into the bowl with the dressing mixture and toss thoroughly until all the onions are well coated.

          Allow the mixture to marinate for at least 20 minutes at room temperature, so the sumac flavors can penetrate the onions.

            Just before serving, garnish with freshly chopped parsley for an added burst of color and freshness.
