2 large red onions, thinly sliced

3 tablespoons extra virgin olive oil

2 teaspoons sumac spice

1 teaspoon sea salt

1 tablespoon lemon juice

1 tablespoon honey (or maple syrup for a vegan option)

Fresh parsley, chopped for garnish

Cracked black pepper (optional)

Instructions
 

In a large mixing bowl, combine the sliced red onions with olive oil, ensuring all the layers are well-coated.

    Sprinkle the sumac spice and sea salt over the onions. Use your hands to gently massage the spices into the onion slices for about 2-3 minutes. This helps to soften the onions and release their flavors.
