Summer Corn and Zucchini Chowder

3 cups fresh corn kernels (about 4-5 ears of corn)

2 medium zucchinis, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

3 cups vegetable broth

1 cup heavy cream or coconut milk

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon lemon juice

Fresh basil or parsley for garnish

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened and translucent.

    Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.

      Add the corn kernels and diced zucchini to the pot, stirring well to combine. Sauté for 5-7 minutes, allowing the vegetables to meld together.

        Pour in the vegetable broth, then add the dried thyme, salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat and simmer for about 15 minutes, uncovered.

          Using an immersion blender (or transferring half to a blender), blend the chowder until it reaches your desired creaminess, leaving some chunky bits for texture.

            Stir in the heavy cream (or coconut milk) and adjust seasoning with additional salt, pepper, and lemon juice. Allow it to heat through for another 5-10 minutes.
