1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch mixed with 2 tablespoons water

2 green onions, sliced for garnish

1 sesame seeds for garnish

Steamed broccoli or mixed vegetables (optional)

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with the water or chicken broth. Bring to a boil, then reduce heat to low, cover, and let it cook for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit for a few minutes before fluffing with a fork.

    Make the Teriyaki Sauce: In a small bowl, whisk together soy sauce, mirin, brown sugar, sesame oil, minced garlic, and ginger. Pour the mixture into a skillet over medium heat and bring it to a simmer. Stir occasionally until the sugar dissolves.
