12 oz penne pasta

2 tablespoons olive oil

1 lb chicken breast, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 ½ cups heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook until they begin to soften, about 2-3 minutes.

        Combine Ingredients: Lower the heat, and add the baby spinach to the skillet, stirring until wilted. Pour in the heavy cream, and bring the mixture to a gentle simmer. Mix in the grated Parmesan and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.
