Ultimate Loaded Potato Meatloaf Recipe

Ingredients
  

2 lbs ground beef

1 cup Mashed potatoes (prepared, can be leftover)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup green onions, chopped

1/2 cup milk

2 large eggs

1 cup breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup barbecue sauce (for glaze)

1/4 cup ketchup (for glaze)

Optional: additional cheese for topping

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a loaf pan or line with parchment paper for easy removal.

    Combine Ingredients: In a large mixing bowl, combine the ground beef, prepared mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, milk, eggs, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until just combined; be careful not to overmix.

      Shape the Meatloaf: Transfer the meat mixture to the prepared loaf pan and shape it into an even loaf. Smooth the top and sides for a neat appearance.

        Prepare the Glaze: In a small bowl, mix together the barbecue sauce and ketchup. Brush half of this mixture over the top of the meatloaf.

          Bake: Place the meatloaf in the preheated oven and bake for about 60-75 minutes, or until the internal temperature reaches 160°F (70°C).

            Add More Cheese: If desired, during the last 10 minutes of baking, sprinkle additional cheese on top of the meatloaf and return it to the oven until melted and bubbly.

              Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. This helps retain the juices when slicing.

                Slice and Enjoy: Serve warm, drizzled with the remaining glaze, and garnished with extra chopped green onions if desired. Pair it with a side salad or steamed vegetables for a complete meal.
